A dash refers to a very small amount of a dry or liquid ingredient, most often a seasoning. Although it is not an exact measure, a dash is generally more than 1/16 and less than 1/8 of a teaspoon. When the seasoning is spicy hot, such as ground red pepper, use a scant 1/16 of a teaspoon and taste the dish before adding more.
