Enchiladas are Mexican entrées prepared by rolling softened corn tortillas around a filling of shredded meat, chicken or cheese. They are baked with a topping of sauce and usually cheese. Enchilada sauces can be made of tomatoes and chilies, green tomatillos or cream.
