Gnocchi, the Italian word for "dumplings," are made from potatoes, flour and sometimes eggs or cheese. Gnocchi are shaped into little balls, squares or strips and simmered in water. They are served with butter and Parmesan cheese or a pasta sauce. The dough can also be chilled, sliced into squares or strips and then baked or fried. Gnocchi are often served as a first course in Italy, but they are usually a meal accompaniment in America.
