Matzo meal is made by grinding matzo, Jewish unleavened bread. It is available in two textures, fine and medium, in Jewish markets and most large supermarkets. This meal is traditionally used to make matzo balls, pancakes and gefilte fish. It is also used as a thickener for soups and stews and as a breading for fried foods.
