Paella is a classic Spanish dish of saffron-flavored rice that originated in Valencia, Spain. It may include a variety of shellfish and meat (such as clams, mussels, shrimp, chicken, chorizo and pork), onions, garlic, tomatoes and often peas. There is no standard recipe. Paella varies from region to region and from cook to cook. It is made and served in a wide, shallow round pan known as a paella pan.
