Roasting involves cooking poultry and large tender cuts of meat in the oven in an uncovered pan. Roasting produces a nicely browned exterior and a moist interior. Roasting vegetables intensifies their natural sweetness. Vegetables, such as onions and carrots, can be roasted alongside meat.
