Salad dressing refers to several different types of mixtures. Vinaigrette is a mixture of oil, an acidic ingredient (such as vinegar or lemon juice) and seasonings (such as prepared mustard, garlic or herbs). It is a two-phase dressing that will easily separate into its oil and vinegar portions when allowed to stand. This type of dressing can be made at home or purchased.
Single-phase salad dressings are creamy dressings that do not separate upon standing. They include mayonnaise, cooked dressings and sour cream- or buttermilk-type dressings. Single-phase dressings can be purchased as well as homemade.
