Sorbet is the French term for sherbet but, unlike sherbet, it contains no milk products. This frozen mixture of fruit juice, fruit purée, water and sugar is more similar to an ice than to sherbet. Sorbet is known as sorbetto in Italy. Sorbet may be served as a palate refresher between courses or as a dessert.
