Also known as Indian date, the tamarind comes from the pod of a tropical tree native to Asia and northern Africa. The pods of this tree produce a refreshingly astringent pulp that is used in Indian and Middle Eastern cuisines much the same way Americans use lemon juice. It is added to curries, chutneys and is a key component of Worcestershire sauce. It also is used as a flavoring for soft drinks.
