Tortoni is a rich frozen Italian dessert made of sweetened whipped cream that is flavored with rum or sherry and mixed or topped with chopped almonds, chopped maraschino cherries or crumbled amaretti cookies (crisp Italian macaroons). When the dessert is served in individual paper cups, it is often called biscuit tortoni. In America, ice cream is sometimes substituted for the whipped cream.
