The Great Pumpkin Cookie
Makes 1 large cookie (about 12 servings)

Use this huge cookie as a colorful party centerpiece. Then break or cut into pieces and serve for dessert.

Ingredients

Butter Cookie Dough (recipe follows)
|
|
1

container (16 ounces) vanilla frosting
|
|
|
Assorted food colorings
|
|
Supplies

Pastry bag and medium writing tip
|
|

|
1. Preheat oven to 350°F. Line 12-inch pizza pan with foil. Press cookie dough evenly into prepared pan.

2. Bake 15 to 20 minutes until edges just begin to brown. Cool completely in pan on wire rack. Remove from pan; peel off foil.
|

3. Tint 1/2 of frosting orange. Frost cookie. Tint remaining frosting as desired. Using pastry bag fitted with medium writing tip, pipe jack-o'-lantern face on cookie.

Butter Cookie Dough
Makes about 2 dozen cookies

Ingredients

cup butter, softened
|
|
1/4
|
cup granulated sugar
|
|
1/4
|
cup packed light brown sugar
|
|
1
|
egg yolk
|
|
1-3/4
|
cups all-purpose flour
|
|
3/4
|
teaspoon baking powder
|
|
1/8
|
teaspoon salt
|
|
|
|
|
|
|
|
|
1. Combine butter, granulated sugar, brown sugar and egg yolk in medium bowl. Add flour, baking powder and salt; mix well. Cover; refrigerate until firm, about 4 hours or overnight.

2. Preheat oven to 350°F.

|
3. Roll dough on floured surface to 1/4-inch thickness. Cut into desired shapes with cookie cutters. Place on ungreased cookie sheets.

4. Bake 8 to 10 minutes or until edges begin to brown. Remove to wire racks; cool completely.
