Sautéed Swiss Chard
Makes 4 (1/2-cup) servings
Ingredients
1 large bunch Swiss chard or kale (about 1 pound)
1 tablespoon olive oil
3 cloves garlic, minced
3/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon balsamic vinegar (optional)
1/4 cup pine nuts, toasted
   
1. Rinse chard in cold water; shake off excess water but do not dry. Finely chop stems and coarsely chop leaves.
2. Heat oil in large saucepan or Dutch oven over medium heat. Add garlic; cook and stir 2 minutes. Add chard, salt and pepper. Cover; cook 2 minutes or until chard begins to wilt. Uncover; cook and stir about 5 minutes or until chard is evenly wilted.
3. Stir in vinegar, if desired. Sprinkle with pine nuts just before serving.
