Honey Oat Biscotti
Makes 3 dozen cookies

Ingredients
1/2 cup butter or margarine
3/4 cup honey
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
3 teaspoons ground cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups quick-cooking rolled oats
1/2 cup chopped nuts
   
Cream butter in large bowl with electric mixer; beat in honey, eggs and vanilla. Combine flour, cinnamon, baking powder, baking soda and salt in small bowl; mix well. Stir into butter mixture. Stir in oats and nuts. Shape dough into two 10×3×1-inch logs on greased baking sheet.
Bake in preheated 375°F oven 12 to 15 minutes or until lightly browned. Remove from oven; cool 5 minutes. Remove to cutting board. Reduce oven temperature to 300°F. Cut each log into 1/2-inch strips; place on cookie sheet. Bake 25 to 30 minutes or until crisp throughout strip. Cool completely on wire racks.
