Blueberry Granola Crumble Pie
Makes 8 servings
Ingredients
1 package (16 ounces) frozen unsweetened blueberries
1/4 cup sugar
2 tablespoons lemon juice
1-1/2 tablespoons cornstarch
2 teaspoons vanilla
1 frozen reduced-fat pie crust
1 cup low-fat granola
   
1. Preheat oven to 425°F. Place baking sheet in oven while preheating.
2. Toss blueberries with sugar, lemon juice, cornstarch and vanilla to coat. Spoon blueberry mixture into pie crust; place on heated baking sheet.
3. Bake 20 minutes; sprinkle granola evenly over pie. Bake an additional 20 minutes or until pie is bubbly.
 
Cook's Tip   If pie is allowed to stand 4 hours or overnight, the flavors will blend, making a sweeter-tasting dessert. This is true with most fruit pies, especially blueberry, cherry and peach pies.
