Makes 4 sandwiches

Shamrock Cheezie with Herb Dip


Ingredients
1/2 cup mayonnaise
2 tablespoons chopped fresh herbs (such as parsley, basil or dill)
8 slices American Cheese
8 slices sandwich bread
  Butter, melted
   
1. Mix together mayonnaise and chopped herbs; set aside.
2. Place 2 slices of cheese on each of 4 bread slices; top with remaining bread. Brush outsides of sandwiches with butter. Using shamrock-shaped cookie cutter, cut sandwich into shape.
3. Place large nonstick skillet over medium heat until hot. Add sandwiches; cook 4 to 5 minutes per side or until cheese melts and sandwiches are golden brown. Serve with herb dip on side.
