Kashi® Raisin 'n' Spice Cookies
Makes about 2 dozen (3-inch) cookies
Satisfy your sweet urge naturally with one of these yummy cookies.
 
Ingredients
2 cups KASHI® Good Friends cereal
1-3/4 cups whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup canola margarine, softened
1/2 cup granulated brown sugar or succanat (crystallized evaporated cane juice)
2 eggs
1 teaspoon vanilla
1/2 cup seedless raisins
  Non-stick cooking spray
   
Preheat oven to 375°F.
Place Kashi Good Friends cereal in plastic bag and lightly crumble with hands into smaller pieces.
In small mixing bowl, combine flour, baking soda, salt and spices. Set aside.
In large mixing bowl, beat together margarine and brown sugar until light and fluffy. Add eggs and vanilla; beat well. Add crushed Kashi Good Friends cereal and flour mixture; mix until well combined. Stir in raisins.
Spray cookie sheet with cooking spray. Drop batter by heaping tablespoonfuls onto cookie sheet.
Bake at 375°F about 10 minutes or until golden brown. Cool on wire rack.
