Spinach & Roasted Pepper Panini


Ingredients
1 loaf (12 ounces) focaccia
1-1/2 cups spinach leaves (about 12 leaves)
1 jar (about 7 ounces) roasted red peppers, drained
4 ounces fontina cheese, thinly sliced
3/4 cup thinly sliced red onion
  Olive oil
   
1. Cut focaccia in half horizontally. Layer bottom half with spinach, peppers, cheese and onion. Cover with top half of focaccia. Brush outsides of sandwich very lightly with olive oil. Cut sandwich into 4 equal pieces.
2. Heat large nonstick skillet over medium heat. Add sandwiches; press down lightly with spatula or weigh down with small plate. Cook sandwiches 4 to 5 minutes per side or until cheese melts and sandwiches are golden brown.
 
Note   Focaccia can be found in the bakery section of most supermarkets. It is often available in different flavors, such as tomato, herb, cheese or onion.
