Ingredients
3 ounces semisweet chocolate, finely chopped
1/4 to 1/2 cup sugar
4 cups milk, divided
1 teaspoon vanilla
  Whipped cream or marshmallows (optional)
   
1. Combine chocolate, sugar and 1/4 cup milk in medium saucepan over medium-low heat. Cook, stirring constantly, until chocolate melts. Add remaining 3-3/4 cups milk; heat until hot, stirring occasionally. Do not boil. Remove from heat; stir in vanilla.
2. Beat hot chocolate with wire whisk until frothy. Pour into mugs; top with whipped cream. Serve immediately.
 
Hot Cocoa   Substitute 1/4 cup unsweetened cocoa powder for semisweet chocolate and use 1/2 cup sugar; heat as directed.
 
Hot Mocha   Add 4 teaspoons instant coffee to milk mixture; heat as directed.
